Wren’s Signature Macaroni Salad

Cook Time: 20 minutes.

This has become a favorite for the holidays, especially Thanksgiving. My nieces and nephews absolutely love it and can’t get enough. 10 servings go by, just like that. I know that if I didn’t separate portion sizes, I would probably eat over half the bowl! I hope you take the time to enjoy this, you’ll love it.

For 10 servings you will need:

  • 1 Box Simple Truth Organic Rotini Macaroni
  • 1 c. Grape Tomatoes
  • 6 Eggs (boiled, peeled, chopped)
  • 1 c. Sweet Relish
  • 1 c. Veganaise (or any mayo)
  • 4 Tb. Yellow Mustard (to taste)
  • 5 Celery Stalks (chopped)
  • 1 Small Red Onion (finely chopped)
  • Salt + Pepper (to taste)
  • Paprika (garnish)

Directions:

The first thing you want to do is prep your eggs and macaroni. For the eggs, place 6 eggs in a small pot and cover with water. Heat on high until it begins to boil and at that point, set your timer for 10 minutes, then remove from heat. Also, remove from water into a bowl and set aside.

For the pasta, heat according to package instructions, drain and put into a large mixing bowl. Add the mayo + relish + mustard + salt + pepper. Stir well and set aside. When it’s not too hot you can place it in the fridge to chill until you are ready to use. Make sure you taste it to see if you need more mayo, relish, mustard, salt or pepper.

While the eggs and pasta are chilling, prep the onion + celery and add to the pasta, along with the tomatoes. By now, everything except for the paprika should be mixed with the pasta. When satisfied with the taste, garnish with paprika as you serve.

It’s important to note that the ingredient list is flexible! If you don’t like tomatoes, don’t put them in the salad. If you like more mayo or mustard, add more! I just put the ingredients down as I used them for the picture, but the truth is, every time I make this dish it’s just a little bit different than before. I’ve made it so often I can just do it by heart and adjust the taste accordingly. Also, having a specified ingredient list helps me make the most accurate nutrition label for you.

Celery helps lower high cholesterol, is an anti-inflammatory, has huge benefits for weight loss, boosts digestion, reduces bloating, and contains anti-microbial properties which fight infections. Pretty awesome 🙂
