Rosemary Roasted Sweet Potatoes

Cook Time: 35 minutes.

A simple and delectable addition to any meal, the oven does all the work for you with this recipe. A few minutes of prep time then sit back and relax while the sweet potatoes roast to perfection. I always make sure that I have sweet potatoes on hand, because we never seem to get tired of this dish and it’s just so easy to make.

For 6 servings you will need:

  • 3 Large Sweet Potatoes (cut into bite size pieces)
  • Salt + Pepper (to taste)
  • Avocado Oil (or any high heat oil)
  • Fresh Rosemary (finely chopped)

Directions:

Preheat oven to 425° F.

For the sweet potatoes, don’t overthink the prep work. I cut the very ends off of the sweet potato then slice it lengthwise into quarters, and then cut horizontally all the way down, creating nice bite size pieces. For 6 servings you will need two 9×13 baking dishes.

Place half of the sweet potatoes in one dish, and the other half in the other dish. Sprinkle with salt + pepper + rosemary, then drizzle enough oil so that when you toss it, there will be an even coat on the sweet potatoes (usually around 2 tablespoons).

It’s important to note that you can use dried rosemary for this recipe, although I prefer fresh because it not only has more flavor, it’s not as “dry” and so doesn’t interfere with the texture of the dish.

So once everything is in the baking dishes, toss to evenly coat and pop in the oven for about 30 minutes. Check them after this time and if they are ready, remove them from the oven. If they aren’t as crispy as you would like, stir them and let them roast for another 10 minutes or so. Ready to eat!
