Creamy Cucumber Salad

This recipe is a bright and colorful addition to any meal, it’s simply delicious. Whether you use sour cream, Greek yogurt or Veganaise, it offers a diverse variety of flavors. Kids seem to like it too!

For 3 servings you will need:

  • 1 Fresh Cucumber (thinly sliced)
  • 1/2 Red Onion (finely diced)
  • Hand Full of Fresh Parsley (chopped)
  • 1 Stalk Green Onion (thinly sliced)

For the Cream:

  • 4 Tb. Probiotic Yogurt (or sour cream)
  • 1 Tb. Fresh Chives (chopped)
  • Salt + Pepper (to taste)
  • 1 ts. Sugar
  • 1/2 ts. Celery Salt
  • 1/2 Lemon (juiced)
  • 1 Tb. Red Wine Vinegar

Directions:

In a small bowl, mix the ingredients for the cream and whisk until smooth. Toss with sliced cucumbers and garnish with red onion + parsley + green onion.
