Sweet Potato Salad

Cook Time: 1 hour.

If you cook the sweet potatoes in advance and have them either ready hot or chilled, it makes this recipe as easy as ever. If the sweet potatoes are done this dish only takes 10 minutes! Packed full of flavor, this is great for a light lunch or as part of a nice dinner with the family.

For 1 serving you will need:

  • 1/3 Cooked Sweet Potato
  • Coconut Oil
  • 1 Tb. Fresh Cilantro (chopped)
  • 1 Tb. Fresh Green Onion (sliced)
  • 1 Tb. Yellow Onion (minced or finely diced)
  • 1/3 Can of Black Beans
  • 1/2 ts. Cumin Powder
  • Salt + Pepper (to taste)

Directions:

Preheat oven to 400° F.

Coat the sweet potato with coconut oil and place in a glass baking dish. Bake for 1 hour. Remove and set aside for when you are ready to serve.

While the sweet potato is baking, prep the other ingredients. Then when the sweet potato is finished, top with the other ingredients you just prepped. You can choose to remove the peeling from the sweet potato or not. The peeling has more nutrients, so it’s up to you. Enjoy!

It’s strong antioxidant properties protects against oxidative stress. It calms your nerves and improves sleep. In fact, ingesting high levels of cilantro extract has about the same effect on your body as Valium. Cilantro helps with Diabetes, as it lowers blood sugar and supports healthy liver function. It also protects against heart disease, helps to prevent urinary tract infections, settles your digestive tract if it’s upset, protects against food poisoning, supports healthy menstrual function, helps fight neurological inflammation, and helps to protect against Colon Cancer. It even soothes skin irritations. I don’t know how much you would have to eat in order to get a measurable benefit from it, but if it’s part of your diet it will help your body. Cilantro is definitely a powerful, potent herb, and usually doesn’t take much to go in a recipe. It’s got that unique flavor that pairs well with lime.
