Okay, so “avocaper” is not a word but I thought this dish deserved its own name because it stands out as one of the best ways to make an appetizer with avocado. And if you love the briny taste of capers this recipe is definitely for you! Of course you could always leave the capers out if you want, but I think they are particularly delicious in this dish. It’s great for a family get together or party and there are so many different ways to present them on the serving dish to add a little pizazz to your table.
For 6 servings you will need:
- 1 English Cucumber
- 3 Ripe Avocados
- 1/4 c. Capers
- 1/2 ts. Sea Salt
- Black Pepper (to taste)
- 2 Tb. Fresh Lemon Juice
- 1/4 c. Fresh Parsley (finely chopped)
- 1/8 c. Fresh Dill
Mash the avocado into a medium-sized bowl and add the rest of the ingredients. Use with English cucumber. I like to have slices of the cucumber topped with the avocado mixture, but there’s really no end to how creative you can be with this dish.
Optional: For a nice display, add an extra sprig or so of fresh parsley with a few more capers centered on top.
Note: It doesn’t take much of the mixture to go on top of the cucumber slices. A teaspoon should be plenty, but I usually put around a tablespoon on each slice.
