Decadent Chocolate Zucchini Cake

Cook Time: 2.5 hours.

This vegan dessert changed my life forever. It made me realize how easy it is to make a cake from scratch! This recipe is so fudgy and delicious, you would never know that it didn’t have any dairy in it! The coolest thing about this recipe is the icing… made from almond butter and sweet potatoes. You heard me. Sweet potatoes. Healthiest icing I have ever had!

For a sumptuous, decadent cake (8×8″), you will need:

Dry Ingredients:

  • 1.5 c. Brown Rice Flour
  • 1 c. Coconut Sugar
  • 3/4 c. Cacao Powder (see notes)
  • 2 Tb. Flax Seed
  • 3/4 c. Shredded Coconut (unsweetened)
  • 2 ts. Baking Powder
  • 1/4 ts. Baking Soda
  • 1.4 ts. Sea Salt

Wet Ingredients:

  • 2 c. Zucchini (grated)   * I use 2.5 cups
  • 1 1/3 c. Coconut Milk
  • 3/4 Tb. Pure  Organic Maple Syrup

Sweet Potato Frosting:

  • 2 Small Sweet Potatoes (cooked)
  • 1 c. Nut Butter   * I use almond butter
  • 1/3 c. Pure Organic Maple Syrup
  • 4 Tb. Cacao Powder (see notes)
  • 1/8 c. – 1/2 c. Coconut Milk (to texture)
  • Pinch of Salt

Directions:

First, preheat oven to 400°F.

Wash the sweet potatoes and slice into 1/3’s. Be careful not to slice all the way through, you just want them to soften nicely while cooking in the oven. Rub coconut oil all over the sweet potatoes and then bake for 1 hr. It’s best to cook these in advance and have them chilled for use.

Second, mix the dry ingredients into a large mixing bowl. Whisk the wet ingredients until mixed and then pour into dry ingredients. Mix thoroughly, then add the zucchini. Line the 8×8 inch baking dish with coconut oil and bake for 40-45 minutes.

Let the cake cool for 30 minutes. While it is cooling, you can blend the frosting ingredients using a mixer or food processor until light and fluffy. Apply the frosting to the cake and either serve immediately or chill until needed.

Cacao Powder

Did you know that this chocolate is a super food? Meaning it’s incredibly healthy! It’s properties for health were well known as far back as 3,000 years! It’s rich in magnesium so it’s excellent for maintaining muscle and nerve health. And although it is high in fat and calories, it also is packed with fiber so it makes you feel fuller. It’s rich in iron so aids in preventing anemia. It reduces the risk of coronary disease and strokes, and is even used in the treatment of diarrhea. Chocolate in the form of cacao stimulates the brain to release specific neurotransmitters, like euphoria, and can trigger emotions, as well as increase focus and awareness. It also contains what has become known as the “bliss molecule”, due to the molecular shape of its lipids which represents the active ingredient of marijuana, THC. Basically, it enhances your mood!

Make sure it’s “cacao” not “cocoa”. Cocoa powder is roasted at a higher temperature than cacao powder, however it is still healthy, but cacao has many more fresh benefits.
