Fresh Romaine Wraps

This savory, sweet recipe has become a favorite in my home. Sometimes simple is better! A little of this and a little of that and before you know it dinner is served! For me, this recipe is never quite the same. Similar to my spaghetti, it changes with every time I make it, finding ways to tweak it with different ingredients. One of the best things about these wraps is that you can literally make them within 10 minutes, it’s a fail safe recipe that is amazing when your in a crunch for time.

To make 8 servings, you will need:

  • 3 Tb Hoisin Sauce
  • 3 Tb Soy Sauce
  • 2 Tb Rice Vinegar
  • 1 ts. Pure Sesame Oil
  • 2 ts. Olive oil   * I use ghee
  • 8 oz. Baby Bella Mushrooms (chopped)
  • 1 Green Bell Pepper (diced)
  • 1/3 c. Raw Pecan Pieces
  • 2 Cloves Fresh Garlic (minced)
  • 2 ts. Fresh Ginger (grated)
  • 1/4 ts. Red Pepper Flakes
  • 4 Stalks of Green Onion (thinly sliced, divided)
  • 8 Large Inner Leaves of Romaine Heart
  • Handful of Freshly Shredded Carrot
  • Handful of Alfalfa Sprouts (optional)
  • Artichoke Hearts (optional)

Directions:

In a small bowl, stir together the hoisin, soy, rice vinegar, and sesame oil and set aside.

Heat oil over medium-high heat. Once heated, add the mushrooms and green pepper. Cook for around 4 minutes. Stir in pecans, garlic, ginger, red pepper flakes, and 1/2 of the green onions. Cook until fragrant (around 30 seconds).

Pour sauce into the mixture and stir to coat. Cook for another 30-60 seconds.

Ready to serve! Just spoon onto the romaine leaves individually and top with remaining green onion. Optional toppings are alfalfa sprouts, grated carrots and extra red pepper flakes.

Enjoy!

These little guys pack a lot of punch in how good they are for you. They’re wonderful to top off salads, sandwiches, almost anything! Wanna know why they are so awesome? They reduce the risk of breast cancer, fight diabetes by lowering blood glucose levels, help prevent osteoporosis, combat cholesterol, are filled with Vitamin C and chock full of antioxidants and other anti-aging agents. And ladies, you may find it hard to believe, but alfalfa sprouts minimize menopause symptoms and excessive menstruation. They’re tasty, too! Places around here such as Kroger doesn’t have them, but our local health food store Eats has them! I swear I can find anything there.
